Today, I had a questionable snack that was mysteriously delicious.
It was GLUTEN, and DAIRY FREE as well as PALEO (ish…. I’ll explain the “ish” later)
First, here’s all I used to make it:
Some pretty decent AND pricey products right there.
The ONLY thing I had a problem with is:
The spinach tortillas have cane sugar in them. BOO!
But I’ll still use them…because I spent money on it.
I browned the beef in cumin, chili powder, cayenne, garlic, and onion seasoning. Then fried the spinach tortilla in ghee, with daiya pepper jack cheese, and the cooked ground beef.
Pretty good, but it just had a very distinct taste to it. Nothing bad, just noticeable.
Toasted it in ghee helped with the flavor, but the spinach was still very distinct.
Overall, it was a good quesadilla. I was surprised with the daiya… I didn’t think I’d like it so much, but it really wasn’t too bad. I probably will continue to make it, but will try a different tortilla alternative next time.
