(Paleo) Southwest Sloppy Joes

HOLY SHIT!

I have not posted on this thing in a long time, I almost forget how to use it!

For the past few months, I unfortunately didn’t have a “full” kitchen, and was not able to cook. It’s a long story, so I’ll spare you the details. Basically – I’ve been going through a lot of professional and personal changes. It’s been a rocky, but great road! I’ve learned so much and am ready to move forward. I was so excited to have a full kitchen to cook in again, just in time for the holidays.

But let’s be honest… you didn’t come here to hear about my bullshit… you came here for the food!!

Today I’m going to post this recipe inspired by this $5 cookbook I found at Five Below (obsessed)

This is a healthy, interesting spin on an all-time nostalgic favorite: Mom’s sloppy Joes (No pun intended) If your family was anywhere from upper-middle class to lower class, you most likely ate these a lot as a child (at least I know I did) at home and the school cafeteria.

I modified it to make it a little more paleo friendly, and interesting. If you’re whole 30, then this would be a cheat day meal that still complies with your diet (besides the gluten free bread… hence the cheat day part)

This recipe isn’t quite as easy as the traditional sloppy joe: browning meat and then throwing in a can of sauce. But hey… a few extra minutes of prep makes this meal super healthy and packed with flavor.

 

Southwest Sloppy Joes

INGREDIENTS:

1 lb ground beef
1/2 white onion
2 roma tomatoes
3 eggs
1 red pepper
1 green pepper
2 jalapenos
1 can of corn
1 can of black beans
1/2 jar salsa
cilantro
avocado
lime

DIRECTIONS:

  • Dice all vegetables and put in large bowl, along with the beef and salsa. Combine all ingredients very well (exclude the avocado and lime)IMG_20171031_163639_995
  • Cook in very large skillet until the beef has completely browned.
  • Brown gluten free ciabatta buns in ghee or butter until toasted
  • Serve on top buns, and top with a tablespoon of salsa and avocado slices. Serve with lime wedges and cilantro.IMG_20171031_112712_620

 

VOILA! There you have it! Simple, yet delicious sandwich! If you’re a fan of Mexican flavors, then you definitely need to give this a try one day.
